Cultivation system: Guyot (4.500 plants per hectare)

Harvest: late September/early October, harvested by hand into small wooden baskets
Vinification: pressing, maceration for 8/10 days, drawing off and subsequent refinement
Alcohol content: approximately 13° vol.
Colour: bright, intense ruby red
Nose: winey, fragrant, exuberant when young. Regales hints of tobacco and strawberry to the nose. The considerable structure is best expressed in red fruit and sour cherry. Pleasant, complex bouquet when mature with mentions of almond
Palate: intense body with a rich, very typical fabric that provides a perfect harmonious blend of structured body and alcohol level
Serving suggestions: comes into its own when served with cured meats and cheeses, but is equally good served with pasta, polenta, roast meals, braised meat and game

Comment of winemaker
Territorio is the one that uniquely blends the art of training a vine with a traditional refinement method; this means that the perfumes and flavours of the “terroir” of my vines reach the bottle unaltered. The grapes come from my vines in Tortona and Sarezzano and the wine is made using traditional systems. Wine ageing takes place after standard drawing off, in the bottle the summer after harvest. After further refinement in the bottle, it is ready for distribution in the autumn. Time spent in the bottle tends to increase its complexity.
