Soil characteristics: calcareous-clay
Cultivation system: Guyot (5,500 plants per hectare)
Vine age: up to 20 years old
Yield per hectare: 5,000 kg/hectare
Harvest: late September, harvested by hand into small wooden baskets
Vinification: soft pressing after which the must is drawn off to naturally separate the turbidity. Fermentation takes place according to strict rules to ensure the classic second fermentation that creates the characteristic bubbles. The natural sweetness is obtained by interrupting fermentation through temperature control. Before being made available for sale, it is refined for a short time in the bottle
Alcohol content: approximately 5-6° % vol.
Colour: deep straw yellow with vividly bright golden hues
Nose: extensive, intriguing, involving and unique with a clear bouquet of fresh fruit ranging from banana to apple on an extraordinarily elegant almond base
Palate: clean, full, velvety and with reasonable acidity that balances out the sugars, filled with a sweet, sunny fragrance

Serving suggestions: goes well with important cheeses, fresh fruit banquets and/or desserts as the perfect “meditation” wine to complete the meal

Comment of the winemaker
This is one of my real “gems”. Created from my own grapes grown on the high hills of Tortona, the grapes are harvested at just the right time to ensure the typically lively, fruity, fresh-flavoured rounded palate, making it a wonderful sparkling wine. Serve as the perfect ending to a meal, topping off desserts and fruit or a superb, unusual aperitif.
